Abstrak

Pindang fish is one of the typical processed fish products of Ciletuh Geopark. However, the producers who sell pindang fish are less concerned with the level of cleanliness and hygiene in the production process and even in marketing. So that it can indicate the health of consumers. If this continues to be done, it will result in no increase in the marketing of pindang fish.

It is very ironic, when the pindang fish is only wrapped in newspaper (used), it is inversely proportional to the pindang fish which contains a lot of protein. Because the paper and ink in this newsprint contain chemicals that are very harmful to health. When the newsprint used to wrap  the pindang fish is wet, the ink and chemical compounds contained in the newsprint will automatically stick to the pindang fish parts. So that it can cause health problems for people who consume pindang fish. Thus, there is a need for development in terms of packaging of pindang fish in order to increase its selling power and economic value and increase the added value of pindang fish itself so that it is safer for consumption by consumers and more suitable for sale in the market. One of the methods used to develop this pindang fish packaging is a vacuum seal. Based on our prediction results, it can be concluded that with the development of packaging for pindang fish with a vacuum seal, it can increase the selling power of producers and can increase the level of hygiene of pindang fish and can increase the added value of pindang fish. So, this pindang fish can be used as one of the typical souvenirs of the Ciletuh-Palabuhanratu Geopark which is identical to processed sea fish
